My Great Grandmother’s book of recipes
210 g flour,70 g sugar,140 g butter,2 egg yolks, a rind of 1 lemon
Let rest over night in a cool place, make the next day, rolling out thinly, thickness of a wheat stem, bake at 350* F, about 5 minutes or until the edges start turning pink.
Let rest for few days in a paper box. Using strawberry or raspberry or red currant marmalade or preserve, stick two of each together. Enjoy !! ********
300g flour, 80 g sugar, juice of half a lemon, 150 g butter, 62 ml milk, 2 egg yolks, about 500 g apples, peeled and thinly sliced, handful of raisins, 10 g sugar
Mix all together into a soft dough, cover in a linen cloth and place in cool space, about 30 min. Divide in half, roll out thinly, about 2 x 10” diameter circles. Place one circle into a ceramic or glass tart shell, filled with apples mixed with raisins and 10 g sugar. Cover with the other circle. Sealed edges. Make 2 or 3 short cuts in the top circle to allow for the steam to escape while baking. Bake at 350* F.
Save the 2 egg white for coconut macaroons – to make later on or even the next day.
